Day by day
So we didn't make it to a Mardi Gras parade like I wanted but that's OK. I'll get to wear my fabulous new hat next year! It rained really hard here the day of the parade and also the one I thought we'd go to was well...not family oriented like I thought. Mike was told by several people and we talked to a lady we didn't know and she said NOT family oriented. I said, " But, there's an alcohol free family area" She was like yes, but you still get to watch all the adult raunchy floats go by. She actually was going to be on a float and showed us a pic on her phone, ok, don't want the boys seeing that. Mike was out of town on other potential days and we missed some already, so no biggie, we will just be better prepared next year!
This is the back of my hat! Love the champagne glasses! Party on!! Can't wait to have my own Mardi Gras themed party....hmmmm...cookie party!!YES!! :-)
I made this quick yummy treat for the boys tonight that I found on Pinterest. They are mini banana splits. Although, I just knew I had whipped cream and didn't but I made them anyway and boys loved them! So easy!!
HAPPY DAY! Our house closed today! Yay! We are so excited! We close on the new house this Friday and will move in on Saturday!! Yippee!!! This is a very happy week! What a great day to close today on Fat Tuesday!! hee hee, I'll eat my King Cake plenty tonight to celebrate! I have decided to give up chocolate for Lent. Now this is going to be a real challenge, but I know I can do it!!
Well, by the time I post again we should be new home owners again! whoo hoo!! The weather is supposed to be very nice for our move this weekend too! Very happy! Toodles!

Just breathe
Whew! Wow, just looked and I haven't blogged since the 7th! wow!! It's been a whirlwind! We went back and packed up and cleaned our whole house to get it ready to close. We are using PODS and don't you know I didn't order enough, luckily they were able to deliver us another POD same day! Thank goodness! Thanks to many wonderful family and friends that helped us get everything out of the house and packed in the PODS!!! We are so grateful to have so many wonderful people in our lives!! Thanks to my wonderful Mobile parents that came and spent several days watching the boys and taking them to school, TKD, helping with homework and treating them to their favorite Joe's Crab shack!! LOL.....
Now it's time to pack up this apartment!! whoo hoo!! Only one week left in here and we are soooooooo excited!!!
The boys are out of school three days next week for Mardi Gras! I was hoping to take them to a parade on Sat. but the weather is predicting rain all day...boo! I'll have to check on another one, really hoping to get to take the boys to a parade this year!
Bry is going for a play date tonight at a friend's house. He is very excited. We will hang with Dev and maybe rent a movie that he has been wanting to see. Took Dev to his 1st soccer practice last night, but he was the only kid that showed up! WHAT?! That was really wierd! The coach was there, but no kids....hmmm..we'll see how this turns out. I also didn't realize that it's a 4 on 4 league. Oh well. It will give him something to do and run out some energy until we find out alittle more about what is around in our area for him. Bry has been going to TKD, but he is now saying he doesn't want to go anymore. I'm not sure why. He is asking about gymnastics again, I have checked around at a few schools for classes. I might try to let him take a trial class and see what he wants to do. I surely don't want to pay for the TKD if he doesn't want to do it. And, on a selfish note, the gymnastics is cheaper :-) But, luckily we are only on a one month trial right now at TKD.
As you can see, he's flexible! LOL. I caught him looking in the freezer like this (he didn't know I saw him) so of course I ran to get my camera and begged him to let me get a pic!
Next Friday is our closing on our new home! Keep the prayers coming that all goes smoothly! One of the gymnastics schools I looked at has Kids(parents) night out every friday. I think we are going to let the boys go next Friday while Mike and I go out to dinner to celebrate!!

Dance time and more
The Mom/Son was fun!
The boys had a great time. I have to say it was very interesting. There was more running around chasing each other than dancing. They did play a few slow songs for the Moms and Sons to dance to. We also got our picture made, I'll have to share it when I get it back.
Just had to take another sleeping picture of B. Love it! He is totally wrapped up in his covers. Don't forget to notice "Rice Baby" in the background. I have become the official babysitter of Rice Baby. Everyday when I pick up B from school he asks the full report of the day, did he cry, did he eat, was he good?? Too funny, I just give Rice baby some good and bad days...LOL.
I can't believe it's almost that time. We will be moving everything out of our house this weekend. It's sad to think about. Even though a chapter in our lives is closing this new chapter is already starting off exciting and I'm happy to think about all the new memories we will create in our new house. The story of the house is unique in itself and I know it's just meant to be!! The boys are happy too, and B is counting down the days till we are in our new home! And...we get to finalize all this in Feb with 29 days it's leap year!! Another neat part of our story to remember!
Well time to head off to finish up some things before time to pick up the boys from school.

Easy
Another quick recipe to share! I found this on Pinterest! Yes, another one! I made them today and oh so yummy! I used the Hawaiian mini sub buns instead but still were great. I made the boys sandwiches without the mustard poppyseed mix but they still loved them. I used spicy mustard instead of Dijon, it's what I had. I also used regular sliced swiss cheese instead of the wrapper slices, again it's what I had. I modified the butter and onion amounts a little since I was only make 5 (2 without onion mix) sandwiches instead of a whole batch, but worked out fine. YUMMY!

It's Friday!
We signed B up for TKD again here at our new place. Yay, he is so thrilled!! D doesn't want to do it, but that's OK, we signed him up for soccer that will be starting soon.
Made a new recipe tonight that I found on Pinterest. It's mini lasagna cups made with wonton wrappers. This recipe was very easy and tasted good. Although, next time I will use less ricotta cheese and more sauce. I like my lasagna more on the saucy side. But I will make again, very good and the boys loved it too.
Here is the recipe I used from Pinterst originally from Canyoustayfordinner.
Petite Lasagnas
recipe slightly adapted from Hungry Girl
12 oz raw ground turkey
1 tsp salt, divided
¼ tsp pepper
1 cup chopped onion
½ cup chopped mushrooms
14.5 oz can crushed tomatoes, or tomato sauce
2 cloves garlic, minced
3 tsp dried oregano, divided
½ tsp dried basil
1 ½ cups part skim ricotta cheese
24 small square wonton wrappers (the kind near the tofu in the refrigerated section of the produce dept)
1 1/2 cups shredded mozzarella cheese
Preheat oven to 375ºF. Heat a large skillet over medium heat. Add the turkey, onions, mushrooms, salt, and pepper. Crumble the meat and saute the mixture for about 10 minutes, or until the turkey is cooked through. Add the garlic and stir constantly for 30 seconds.Add the crushed tomatoes and 2 tsp of oregano. Bring the pan to a gentle boil. Reduce the heat to low and simmer for 10 minutes. Remove from heat and set aside.
In a large bowl, combine the ricotta, a pinch of salt and pepper, the remaining teaspoon of oregano, and the basil. Stir to mix well. Set aside.
Coat a 12-cup muffin tin with nonstick cooking spray. Place 1 wonton wrapper into each of the 12 cups, pressing firmly in the bottom of the cup and up the sides.Using half of the ricotta mixture, divide it among the 12 muffin cups. Next, using half of the turkey tomato sauce, spoon it evenly over each of the ricotta filled cups. Sprinkle with 2 tsp of mozzarella.Gently press another wonton wrapper on top of the mozzarella layer.
Repeat the process by distributing the remaining ricotta, then the remaining tomato sauce, and finally the rest of the shredded mozzarella.Bake for 10 minutes, or until the cheese has melted.Let the cups cool, remove them from the pan, and serve!
I also got this cute strawberry football idea on Pinterest too! I then added my own touch and made a heart treat for the boys to go with it. They were wanting me to make them an early Valentine special treat :-)
I have a few more new recipes that I'm going to try out this weekend. I'll let you know how those go.
I'm excited for tomorrow night. It's a Mom/Son dance at the boys school. The theme is outdoors and they encourage you to wear your camouflage! hee hee! We'll be comfy while at the Father/Daughter others will be semi-formal! Lovin' the comfy outdoors theme, perfect for boys!!! I'll be sure to take some pics! Luckily I found the boys a camo shirt at Old Navy for only $4 each! Nice!! Although, I was out on the hunt for me some Mommy camo and didn't really find exactly what I was looking for, but I did find something that will work. I also got a cute pink tree type camo visor hat to go with. yay!
We'll be enjoying the Superbowl on Sunday with some yummy snacks. Again, trying some new recipes.
We are on the countdown to our new home!! yay!! Only about 24 more days...whoo hoo!!!
